WESTCOMBE CHEDDAR

Our flagship cheese, a traditional clothbound Cheddar made here in the lush hills of East Somerset from unpasteurised milk. Our Cheddars are made entirely by hand and age for around 12-18 months in our hillside cheese cellar. As they age they develop their mellow but complex flavour, with long brothy notes of hazelnut, caramel and citrus revealing on the structured breakdown. Perfect on a cheeseboard, in a sandwich, melted over a burger, bubbling under the grill… wherever the mood takes you.

DUCKETT’S AGED CAERPHILLY

Adopted from local cheesemaker Chris Duckett and based on his family’s 1930s recipe, Duckett’s Aged Caerphilly is made from the same raw milk as our Cheddar. The cheeses are finished in a brine dating back to the 1990s, then aged for around 4-10 weeks in our dedicated caerphilly cellar. Fresh tasting and with a pleasant lactic tang, initials flavours of summer grass, herbs and raw mushrooms lead to a uniquely savoury/umami finish. This cheese is famed for its dual texture: the slightly crumbly interior contrasting with the softer layer just under the rind.

WESTCOMBE SOMERSET RICOTTA

Our Somerset Ricotta is made using the rich whey leftover from our Cheddar. With its full flavour, pleasant saltiness and unique texture, it makes a truly versatile soft cheese. Try it drizzled with honey as a simple dessert, spread on fresh sourdough with softs herbs and olive oil, or as a base for dips and savoury fillings. It’s also great in the kitchen – perfect for pasta dishes or pastries – and elevates cakes and puddings to the next level (use instead of cream cheese for a mind-blowing cheesecake).

WESTCOMBE SMOKED

The smoked version of our classic Westcombe Cheddar. Made with unpasteurised milk and matured in our hillside cheese cellar for around 15 months, the Cheddars are then smoked over beech wood for 48 hours. The smoking imparts beautiful coffee and caramel notes deep into the cheese, creating amazing new levels of complexity. Great on its own, but epic in the kitchen, adding a campfire richness to anything from burgers to rarebits to gratins.
